This iOS issue is quite common. The volume bar is gone, you are not able to adjust the volume and there are obviously no sound at all when you play the music, unlock the device or do whatever that you should hear the sound. Like the following images:

HOW TO FIX IF THERE ARE NO SOUND AND THE VOLUME BAR IS GONE IN IOS?
It seems you in serious trouble and need to bring your iPhone or iPad to the repair service. But trust me, you can fix the problem by the following solutions.
Solution 1: Reset All Setting (Setting > General > Reset). If the problem remains the same, you need to get to DFU status, then restore the iOS using iTunes.
Solution 2: Restore iPhone
Firstly, get DFU status by holding the 2 buttons (Power and Home) in 10 seconds roughly. And then free the Power button and keep holding Home button until iTunes get connected to your iPhone.
Press and hold Option + Alt (Mac keyboard) or Shift (Windows) and choose Restore iPhone.
Solution 3: 100% solves the issue, but can be used for Jailbroken iPhone, iPad only.
Use iFile, iFunbox or similar softwares, locate and remove the following file:
- “com.apple.iapd.plist” (should be found in System/Library/LaunchDaemons/com.apple.iapd.plist).
